We present a home-style interpretation of a cocktail found on the seasonal menu. Designed as a batch prepared mix that's loaded with the essence of the festive period, which makes it perfect for your holiday party. Save the extra syrup you can use for morning drinks, puddings, or to mix another batch of the drink.

To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
Making the Citrus Syrup: Put the listed items in a pan, bring to a gentle boil, stirring to dissolve. Next, take off the heat and let it to cool fully. Transfer into a sealable bottle, seal and store in the refrigerator, it can be stored for around a month.
To make Batch Mix: Combine the specified liquids in a sizeable container, let it rest for one hour, then filter it preferably using muslin, so it's completely strained.
To serve: Measure 85ml from the premix into a stirring glass filled with ice, gently stirring carefully for a minute until cold. Pour into a cold coupe glass or similar, garnish with a few cranberries and complete it by giving it a quick spritz of mandarin oil above the glass.
